- 1 cup long grain brown rice (not pictured)
- 1/4 cup soy sauce
- 1/4 cup fresh lemon juice
- 2 TBS rice vinegar
- 2 tsp light brown sugar
- 1 tbs oil
- 1 pound peeled, deveined shrimp
- 1/2 lb snow peas, trimmed & halved
- 1 piece fresh finger, peeled & cut into matchsticks
- 1 Haas Avocado, pitted & cut into chunks (not pictured)
- Cook the rice
- in a small bowl stir together the soy sauce, lemon juice, vinegar, & sugar until sugar is dissolved. Set it aside
- Heat oil in a large skillet over medium-high. Add shrimp, snow peas, & ginger; season with salt & pepper. Cook until shrimp is opaque throughout & snow peas are bright green 2-3 minutes.
- Divide rice among four bowls. Top with shrimp mixture & avocado... Voila!!
